Tandoori Chicken Burger

Did someone say burgers? Yes, you heard that right! Our spice blends are little pots of magic and great for creating every day favourites with a twist. This week we made a Tandoori Chicken Burger using our Punjabi Spice Blend which is perfect for spicing up any type of chicken.
Ingredients
- Drizzle of oil
- 1 chicken breast (makes two burgers)
- 2 tbsp yoghurt
- 3 tsp Punjabi Spice Blend
- juice of 1 lime
- Two brioche buns
- Lettuce
- Two slices from a large tomato
- Lal Piaz Chutney or your choice of sauce
Directions
Cut the chicken breast into two thin fillets.
Use a meat mallet to tenderise the chicken. Tip, if you don't have a meat mallet at hand then a rolling pin will do. Canned food like beans or even an empty wine bottle will also work well but remember to use cling film over the chicken first!
To make the marinade, add 2 tbsp of plain yoghurt in a bowl. Dairy free alternative will also work. Add the lime juice and 3 teaspoons of Punjabi Spice Blend. Mix thoroughly. Coat the chicken in the marinade and refrigerate for at least one hour.
Heat a drizzle of oil in a griddle pan. When hot add the chicken and let it cook for approx. 6 minutes, turning frequently.
Place a slice of cheese on the chicken steak and place aside.
Lightly toast the brioche buns in the same pan
Create your burger with a layer of lettuce, chicken, cheese and tomato and finish off with Lal Piaz chutney or your choice of burger sauce.
Serve with home-made steak cut chips.
