Stuffed Pepper Recipe

This is a Mediterranean-inspired stuffed peppers with chicken and spinach Achari for filling and a colourful mango salsa salad to compliment the dish. This is a great family dinner that packs in plenty of flavour.
Ingredients

400g finely chopped chicken

A few tbsp oil

2 sweet red peppers

150g baby spinach

A jar of Achari Tarka Sauce

Handful Coriander
-
1 green mango
-
1 jalapeno
-
6 radishes
-
Half cucumber
-
100g pomegranate seeds

One lemon squeezed
Mango Salad
Directions
Heat the oil in a pan.
Add the chicken and stir fry for 1 -2 mins until sealed.
Add the spinach and cook for approx 2 mins until it wilts.
Add the Achari Tarka sauce.
Add 70ml of water to the jar and empty it into the pan.
Leave it to cook for 6-7 minutes.
Prepare the peppers by cutting the centre and creating an opening. Be careful not to cut through the pepper!
Oil an oven tray and place the peppers on it.
Now very carefully, transfer the cooked chicken into the pepper. Stuff the peppers well.
Place them in a preheated oven at 200 degrees for 25-30 mins.
Now let's prepare the salad.
Chop all the ingredients into a bowl.
Cut 1 lemon and squeeze it into the bowl.
Give the bowl a good mix, let all the flavours mix together well!
Once the peppers are ready plate them, and serve with the fresh mango salad.
