Vegan Balti Bean Biryani

Ingredients

  • 1 Jar Balti Sauce

  • 220g kidney beans

  • 220g chick peas

  • 100ml veg oil

  • 250g potatoes

  • 350g rice

  • 150ml coconut milk

  • 100ml water

Directions

  1. Add oil to a pan

  2. Add the potatoes

  3. Add lid and cook for 5 minutes

  4. Add the beans and chick peas

  5. Add the Balti sauce and 70ml water and stir

  6. Add 70ml water

  7. Stir and allow to simmer for 2-3 minutes

  8. Add the coconut milk

  9. Allow to simmer for further 2-3 minutes

  10. Add the rice to the pan

  11. Gently stir

  12. Add 100ml water to the rice

  13. Chop some coriander, mint and chilli for garnish

  14. Allow the rice to simmer until the water dries

  15. Add the chopped garnish

  16. Wrap the lid with a cloth to help with steam cooking and place the lid on the pan.

  17. Let it steam cook on low heat for approx. 15 mins

  18. Serve and enjoy!
