Ingredients

1 Jar Balti Sauce

220g kidney beans

220g chick peas

100ml veg oil

250g potatoes
-
350g rice
-
150ml coconut milk
-
100ml water
Directions
Add oil to a pan
Add the potatoes
Add lid and cook for 5 minutes
Add the beans and chick peas
Add the Balti sauce and 70ml water and stir
Add 70ml water
Stir and allow to simmer for 2-3 minutes
Add the coconut milk
Allow to simmer for further 2-3 minutes
Add the rice to the pan
Gently stir
Add 100ml water to the rice
Chop some coriander, mint and chilli for garnish
Allow the rice to simmer until the water dries
Add the chopped garnish
Wrap the lid with a cloth to help with steam cooking and place the lid on the pan.
Let it steam cook on low heat for approx. 15 mins
Serve and enjoy!
